Chicken in Tserepa

Chicken in Tserepa is the traditional Ithacan way of cooking, usually, chicken, but also of other types of meet, like goat or rabbit. Tserepa is a type of clay pot, used essentially to cover a pan with food. It is made out of white clay, with water and goat hair that help “bind” it. So, when tserepa goes into a wood stove, what comes out is the best chicken you have ever tried! It is not only chicken of course, the recipe includes potatoes, tomatoes, peppers, coarse salt, garlic, parsley and oregano.
